I'm keen on opening shop this summer.

Cold plate freezers are the best as they don't require electricity and keep your cones at the right temperature. But they can be expensive.

The other options are:
- chest freezer (which runs on a generator), and
- dry ice chest (insulated boxes that keep the ice cream cold)

If you're on a budget, go for a chest freezer. I have it in my own truck and it does a good job.
